SPOKANE, Wash. – Indicana restaurant will host their grand opening on Tuesday hoping to give new life to the Perry district with a unique story on how the restaurant even began.
Noreen Hiskey, the head chef of the restaurant has spent a lot of time in the culinary world owning Inland Curry but even before that in her home kitchen in India.
Hiskey started her journey into co-owning a restaurant when she was approached with the business idea by her most loyal customer Chip Overstreet.
“I visited Noreen almost every Thursday at Feast because she never served the same thing, it was always something new and exciting” Overstreet said.
The pair decided to team up after Hiskey served Overstreet some Indian inspired tacos that he couldn’t stop thinking about.
The idea of Indian inspired tacos came from Hiskey’s husband who needed a more convenient and fast way to eat his favorite foods.
“While journeying to India he tried an Indian inspired taco in a naan shell and said how delicious it was” Hiskey said.
Overstreet approached Hiskey with the business idea of starting Indicana by combining their Indian favorites with traditional Mexican flavors.
The project took off from there. The pair bought a run-down Perry district building that had been vacant for nearly 11 years. They renovated it to the styled and cozy building that now stands in its place.
The restaurant is a passion project for Overstreet as he said he is retired now from other endeavors as he previously owned Spiceology.
They have been open for two weeks as they ‘soft started’ and said they are prepared for the expected influx of people in the coming weeks.
Indicana will open starting at 3 p.m. on Tuesday and they are expected to have a full house, so people are encouraged to make reservations for dinner.
