By now you’ve probably seen the print ad:
A delicious burger, divided up by it’s component parts, neatly labeled with not only WHAT they are, but WHERE they come from.
The bun – from Alpine Bakery in Spokane. The beef – Gebbers Farm of Brewster, WA. The cheese – a product of Rogue Creamery in Central Point, OR. The bacon – straight from Hills Meats in Pendleton, OR.
This ad – with it’s tagline of “Source everything regionally with an emphasis on sustainability for the future” and it’s “wheresyourfoodfrom” hashtag – along with this dissection of a meal and transparency in where it’s from, tells you two important things about Cascadia Public House (one of the newest eateries in Spokane):
#1 – They are a business that believes in community, quality, and the future.
and #2 – They make food that they want you to really, REALLY, enjoy.
Located on North Ash Street in the same area as Five Mile Heights Pizza Parlor, Cascadia is designed so that everyone feels welcome. The dining room is split between seating around the bar and seating around the kitchen. There is also seating available on the patio outside, weather permitting. The decor is simple but tasteful, and pairs well with artwork that changes on a monthly basis when a new featured artist takes over the space.
The Cascadia menu is also created to be as welcoming as possible. Not only do they have traditional (and not-so-traditional) pub fare like burgers (the Cascadia burger is the one featured in the print ad, with beef, bacon, smoked cheddar, butter lettuce, tomatoes, red onion, chipotle aioli, and a fried egg), nachos, salads, pastas, and appetizer/shareable plates, they also have a variety of vegetarian, vegan, and gluten free options. Children are more than welcome at this public house, and they get menu items of their own to choose from, such as mac and cheese or toasted peanut butter and jelly sandwiches.
Of course, what is a public house without great drinks to pair with the great food? The Cascadia cocktail menu has some classics as well as some familiar drinks with a new twist on them. The Cascadia Lemon Drop Martini combines 44 N Huckleberry Vodka and Cointreau with lemonade and fresh blueberries, while the Maple Street Mule includes Dry Fly Vodka, lime, ginger beer, and more blueberries. They also have house wines from Canyon Road, and beers on tap such as No-Li, Irish Death, and Bud Light.
But just delicious food and tasty drinks are not all that make up Cascadia Public House. They’ve embraced the community aspect of their name, with live music and games on the patio, First Friday artist receptions to bring in the new featured monthly artists, communal seating areas outside around the fireplaces, television sets playing sporting events in the bar areas, and puzzles on the kids’ menus to keep the kiddos engaged during meals. Cascadia isn’t just another restaurant or bar to stop in at. It’s a place you can return to again and again. Where you can spend some time chatting with family and friends, maybe participate in a fun event, and eat a delicious meal that you know is good for you, the environment, and the community.
