Some of the recipes I find on Pinterest are much simpler than others. They aren’t so much an ‘impossible’ challenge as just something that looks tasty that I’d like to try. Creamy Tomato Tortellini Soup was that kind of recipe. It looked delicious and easy to make, which was a double win as I was looking for something relatively quick and simple to make for dinner before heading out for the evening.
Ingredients for this soup included cloves of garlic, olive oil, condensed tomato soup, sun dried tomatoes, milk, half-and-half, chicken stock, onion powder, salt and pepper, Italian seasoning, cheese filled tortellini, and shredded Parmesan cheese. I substituted minced fire roasted garlic for fresh cloves because it was easy and a little steak seasoning for the Italian seasoning because I didn’t realize I didn’t have Italian seasoning. I skipped the sun dried tomatoes altogether because I’m not super fond of eating chunks of tomato and figured the soup would taste fine without them. I was right.
As I didn’t have to make the base of the soup from scratch, or the pasta from scratch, this was a very quick dish to assemble. The garlic was sauteed a bit, the stock and tomato soup and other liquids were added to the pot and brought to a simmer, and then the pasta was added and cooked the length of time it directed on the package. Super easy.
Once the pasta was cooked through the soup was dished up and topped with some shredded Parmesan. I also had some Artisan bread to eat with it, which I wasn’t totally fond of. It had a rather chewing crust and I think some crispy crust bread would have been better.
The soup was definitely a success, and not just because it was so easy to make. It also tasted pretty dang good. Lovely creamy tomato flavor and a fun addition with the cheesy pasta. I can definitely see me making this again when I want something filling and tasty but also quick to prepare.
