I love red velvet cake.
Like LOVE it.
It’s my very favorite (just in case anyone wanted to send me presents of delicious cake once in a while).
I also love cheesecake.
It’s like a thing. A dessert thing.
A tasty tasty dessert thing.
But I digress.
While looking for a new recipe to try on Pinterest recently I stumbled across one for Red Velvet Cheesecake Brownies. It was like a beautiful, delicious, sweet, sign. Obviously it was meant to be my next Pinterest:Impossible recipe.
First off, I made a change to the ingredients list. It called for chocolate cake mix and red food coloring to make the red velvet cake. But why go for fake red velvet when I could have the real thing? So I bought red velvet cake mix to work with. The rest of the recipe I followed as directed. Hey, I can do what I’m told once in a while.
And here’s the thing about me and baking. Even when I follow directions, things don’t always (usually) turn out as expected.
Brownies are denser than cake. It’s part of what makes them brownies. And I think it has something to do with how many eggs you use or how much oil you put in or … whatever. Look I’m not a baker or a home chef or making a surprise appearance as an expert on MasterChef. I’m just a blogger-gal who likes to try recipes she finds on Pinterest because that’s what all the cool kids are doing these days.
So I don’t know why brownies are denser than cake. They just are.
But my red velvet cheesecake brownies unfortunately were not. Maybe because I used the red velvet mix instead of chocolate mix. Maybe because I mixed by hand instead of with an electric mixer. The world may never know.
Anyhoo, so yes, my brownies turned out fluffier than expected. And not quite as chocolatey or cheesecakey as I wanted.
BUT.
They were still awfully good. Sweet and a bit decadent and particularly good with a bit of vanilla ice cream on the side. Though they may not have turned out looking exactly like the recipe picture, or tasting exactly like I expected, they were still what I would call a WIN.
A tasty, tasty win.
